Restaurant finance is a weekly discipline, not a monthly one. Prime cost — food plus labour — moves fast enough that a monthly close tells you about a problem three weeks after it started costing money. Multi-location groups need the same numbers per site before any of it is useful.
Managed accounting covers the full monthly cycle rather than a piece of it: transaction coding, bank and card reconciliation, AP and AR, payroll posting, accruals and prepaids, deferred revenue, and a close that produces statements you can hand to a lender without a caveat. The part most providers leave out is the balance sheet. Cheap monthly accounting that only categorises transactions and never reconciles the balance sheet produces books that look fine all year and fall apart at tax time — and the cleanup is billed at a premium by whoever inherits it.
Flat monthly fee driven by transaction count, account and entity count, payment channel sprawl, and how fast you need the close.
Revenue is a poor predictor of cost. A $10M consultancy issuing 40 invoices a month is cheaper to serve than a $2M ecommerce brand processing 3,000 orders across four channels.

Find My Solution →Prime cost is the number that decides whether a restaurant makes money, and it moves week to week with purchasing, waste and scheduling. Finding out at month end that food cost ran four points high means the money is already gone. Weekly, it is a correctable operating problem.
Booked gross with each commission, marketing fee and adjustment recorded as its own line. Recording the net deposit as revenue hides the true cost of the channel — and delivery is frequently the line doing meaningful volume at negative contribution once it is measured properly.
Bank, card and payment-processor reconciliation to zero unexplained difference; AP and AR aging tied to their balance sheet control accounts; payroll and employer taxes posted and reconciled; accruals, prepaids and deferred revenue booked; depreciation posted; a full balance sheet reconciliation with a schedule behind every account; and a variance review against budget and prior month before anything is distributed.
Ten business days is a comfortable standard for most businesses under $20M, and that is what we run to. Five is realistic for a simple single-entity company with automated feeds. If yours takes twenty, the cause is almost always sequencing rather than staffing — cash has to reconcile before AP, AP before accruals, accruals before the P&L means anything.
Yes. Budget roughly 1.5x the normal monthly rate for each month being cleaned up, with a floor around $1,500. Twelve months behind at an $800/month run rate is realistically a $10,000–$15,000 project, and it has to finish before ongoing work produces trustworthy numbers.
